The highlight of the Villégiatures festival: Clotaire Poirier - 34-year-old virtuoso and electrifying finalist in Top Chef 2024, after having thrilled the kitchens of the temples of Nordic cuisine (Kadeau **, Noma *** in Copenhagen) - puts his knives to the test on the island for two fiery evenings.
His signature cuisine? Both raw and delicate, it combines wild harvesting, vagrant fermentation, deep acidity and surgical precision.
For his first visit to the Isle of Beauty, he set himself a double challenge. First, to explore Corsica's culinary terroir: surveying the Cargèse scrubland in search of its endemic riches, unearthing the best local fish, exceptional livestock and market garden treasures. Then, transform these finds into an original tasting menu, cooked entirely over an open fire. All served at sunset in the gardens of Villa Flaka, facing Péro beach. You've got to admit, there are worse things on offer.
